Veggie Scramble

Ingredients:

1 Egg

1 Carrot, shredded
-
2 florets of Broccoli, chopped

3 Cherry Tomatoes
-
1 teaspoon butter
-
1 handful Spinach
-
Salt & Pepper to taste
Directions:

Heat butter in a skillet on med heat
-
Add spinach, carrots, broccoli, and tomatoes
-
Sautee for 1-2 minutes
-
Reduce heat to low, crack open the egg into the skillet, stirring constantly until well mixed and cooked through.
Notes:
The secret to perfect scrambled eggs is low heat and constant stirring!
