Veggie Scramble

Prep Time: 3 Minutes

Cook Time: 3 Minutes

Servings: 1

Ingredients:

  • 1 Egg

  • 1 Carrot, shredded

  • 2 florets of Broccoli, chopped

  • 3 Cherry Tomatoes

  • 1 teaspoon butter

  • 1 handful Spinach

  • Salt & Pepper to taste

 

Directions:

  • Heat butter in a skillet on med heat

  • Add spinach, carrots, broccoli, and tomatoes

  • Sautee for 1-2 minutes

  • Reduce heat to low, crack open the egg into the skillet, stirring constantly until well mixed and cooked through.

 

Notes:

The secret to perfect scrambled eggs is low heat and constant stirring!
