Tangy Broccoli Salad

Yields: 4 servings

 

Prep notes: Make ahead (the day before) and refrigerate for best results

 

 

 

 

 

Ingredients: 

 

4 heads fresh broccoli
1/2 red onion
1/2 pound cooked bacon or prosciutto
1 cup craisins
1 cup slivered almonds

1/4 cup mayonnaise
3/4 cup plain yogurt
1/4 cup sugar
2 tablespoons white wine vinegar

 

Directions: 

 

  • Cook bacon, cool and crumble. 

  • Combine broccoli florets with chopped red onion, bacon, craisins, almonds and mix well. 

  • To prepare the dressing: mix the mayonnaise, yogurt, sugar and vinegar together until smooth.

  • Mix into the salad and serve!

 

Notes: 

 

Most markets sell bagged, pre-washed broccoli florets. They are a huge time-saver for those of us in a hurry!
