Stuffed Bell Peppers

 

Prep Time: 20 minutes

Cooke Time: 30 minutes 

Servings: 6

Ingredients:

 

  • 6 Bell Peppers (any Color)

  • 1 lb ground Turkey 

  • 1/3 of a yellow onion

  • 1 (14.5 oz) can of peeled and chopped tomatoes

  • 1/2 cup uncooked rice

  • 1 cup water

  • 1 (8 oz) can of tomato sauce

  • 1/2 cup of cheddar cheese (optional)

  • 1.5 tsp of spices (oregano, basil, garlic, parsley, etc***See Tips Below***

  • Salt & Pepper

 

Directions:

  • Preheat oven to 350°F.

  • Bring a large pot of salted water to a boil.

  • Cut off the tops of the peppers and remove the seeds.

  • Boil peppers for 5-7 minutes, drain. Set aside.

  • In a large skillet, saute beef and onions beef is browned (about 5 minutes.)

  • Drain excess fat, and season with spices, salt and pepper.

  • Stir in the tomatoes, rice, tomato sauce and 1 cup water.

  • Cover and simmer for 15 minutes, or until rice is soft.

  • Remove from heat.

  • Sprinkle a little cheese at the bottom of each pepper. Stuff each pepper with the beef and rice mixture, layering some cheese in between meat mixture.

  • Place peppers standing up in a baking dish. 

  • Cover and bake for 25-30 minutes.
