

Stuffed Bell Peppers

Ingredients:

6 Bell Peppers (any Color)

1 lb ground Turkey
-
1/3 of a yellow onion
-
1 (14.5 oz) can of peeled and chopped tomatoes
-
1/2 cup uncooked rice
-
1 cup water
-
1 (8 oz) can of tomato sauce
-
1/2 cup of cheddar cheese (optional)
-
1.5 tsp of spices (oregano, basil, garlic, parsley, etc***See Tips Below***

Salt & Pepper
Directions:

Preheat oven to 350°F.

Bring a large pot of salted water to a boil.

Cut off the tops of the peppers and remove the seeds.

Boil peppers for 5-7 minutes, drain. Set aside.

In a large skillet, saute beef and onions beef is browned (about 5 minutes.)

Drain excess fat, and season with spices, salt and pepper.

Stir in the tomatoes, rice, tomato sauce and 1 cup water.

Cover and simmer for 15 minutes, or until rice is soft.

Remove from heat.

Sprinkle a little cheese at the bottom of each pepper. Stuff each pepper with the beef and rice mixture, layering some cheese in between meat mixture.

Place peppers standing up in a baking dish.

Cover and bake for 25-30 minutes.
