Gluten Free Apple Muffins

For the first time in WEEKS...I had a day off. So what's a girl to do?? I started the day off with some baking. Gluten Free baking, specifically. In case you haven't had the chance/need to bake GF foods, here's something you outta know...most of it doesn't taste very good. It's a fact...and it sucks. Gluten free flour just doesn't cut it. SO here's a little recipe to cheer you up and give you something that actually tastes GOOD! Say hello to the Gluten Free Apple Muffin. To give you an idea of how good it actually is....I made 12 and now have 4. I swear it wasn't just me....seriously :)
