Red Cabbage Slaw

Yields: 3 Servings
Ingredients:
2 Cups finely sliced red cabbage
2 Small Carrots, grated
2 Tablespoons Olive Oil
3 Teaspoons of Sugar
1/4 cup Rice Vinegar
Salt and Pepper to Taste
Directions:
Combine all ingredients and mix well. Drain excess fluid before serving.
Notes:
Great with Fish Tacos or as a side dish to any meal!
