Corn Chowder
Prep time: 15 minutes
Cooking time: 30 minutes
Yields: 8 servings
Ingredients:

6 ears of corn, kernels removed
-
1 yellow onion, diced
-
4 large potatoes, diced
-
1 large chicken breast, diced
-
2 cups of milk
-
3 cups of chicken broth
-
2 tablespoons of grapeseed oil (if not using bacon)

2 teaspoons sea salt
-
2 teaspoons black pepper
-
2 stems of green onions
Directions:
-
Cook chicken in a large pot on medium heat with grapeseed oil until almost cooked through.

Add potatoes and onion to the pot and cook with the chicken for 5 minutes.

Add chicken stock
-
Add salt and pepper, stir
-
Stir in corn
-
Bring to a boil, lower heat and cover with lid
-
Cook for 20 minutes.

Heat milk in a saucepan.
-
Add milk to Soup just before serving.
-
Pour into bowls and garnish with green onions.
