Corn Chowder

Prep time: 15 minutes

Cooking time: 30 minutes

Yields: 8 servings

Ingredients:

  • 6 ears of corn, kernels removed

  • 1 yellow onion, diced

  • 4 large potatoes, diced

  • 1 large chicken breast, diced

  • 2 cups of milk

  • 3 cups of chicken broth

  • 2 tablespoons of grapeseed oil (if not using bacon)

  • 2 teaspoons sea salt

  • 2 teaspoons black pepper

  • 2 stems of green onions

 

Directions:

  • Cook chicken in a large pot on medium heat with grapeseed oil until almost cooked through. 

  • Add potatoes and onion to the pot and cook with the chicken for 5 minutes.

  • Add chicken stock

  • Add salt and pepper, stir

  • Stir in corn

  • Bring to a boil, lower heat and cover with lid

  • Cook for 20 minutes.

  • Heat milk in a saucepan.

  • Add milk to Soup just before serving.

  • Pour into bowls and garnish with green onions.
